Most rice comes from the grass species called Oryza sativa. This is often called Asian rice. Another kind is Oryza glaberrima, which is African rice. In 2023, the world produced 800 million tons of rice. This makes it the third largest crop after sugarcane and maize.

Growing rice involves many careful steps. Farmers can plant seeds directly into the soil. They can also grow seedlings in a bed first. Then, they move the small plants into the field by hand. This way of growing is called transplanting.

Some rice grows in flooded fields called lowlands. Other rice grows in dry, hilly areas called uplands. The plants can grow over 1 meter tall. In deep water, they can reach 5 meters in length.

After the harvest, the rice must be processed. The dry grain is milled to remove the outer layers. This includes the husk and the bran.

If you only remove the husk, you get brown rice. If you remove more, you get white rice. Some rice is parboiled, which means it is steamed before milling. This helps keep vitamins inside the grain. Cooked white rice has 29% carbohydrate and 2% protein.

Some rice is even used for sweet treats like mochi. Different types of rice have different textures. This is because of the starch inside the grain. These starches are called amylose and amylopectin.
