It is a very important part of many meals in East and Southeast Asia. People love it because it is a rich source of protein. It is also low in calories. Making tofu is good for our planet, too. It uses very little land to grow. It also creates very few greenhouse gas emissions. This makes it a smart choice for the Earth.

Making tofu is a step-by-step way of working. First, people clean and soak soybeans in water. Next, they grind the beans to make soy milk. Then, they boil the milk to prepare it. The most important step is called coagulation. This is when a special salt or acid is added to the warm milk. This causes the milk to turn into solid curds. Finally, the curds are pressed into blocks of different textures.

Tofu later traveled to Japan during the Nara period. It first appeared in Japanese records in 965 AD. In the Ming dynasty, a writer named Li Shizhen described how to make it. Many people believe tofu spread through Asia as Buddhism grew. This is because tofu is a great protein for vegetarians.

There are many different kinds of tofu to find. You can find silken tofu, which is very soft. You can also find firm or extra firm tofu.

In Indonesia, people call it tahu and use it in snacks like tahu goreng. In the Philippines, people eat a soft version called tahô for breakfast. Even Benjamin Franklin mentioned tofu in a letter in 1770. He called it "cheese" from China. The first tofu company in the United States started in 1878.

Tofu is a lot like the cheese you might know. Both foods are made by turning liquid milk into solid curds. In Japan, people use a white powder called nigari to make tofu. This powder comes from seawater. Some people use calcium sulfate, which is also called gypsum. This helps make tofu rich in calcium. Whether it is soft or firm, tofu is a wonderful food that brings people together.
