It all starts with germination, where a tiny root emerges within 48 hours. Next, the plant grows leaves called cotyledons to feed the young seedling. As the plant matures, it grows leaves with three blades.

Small flowers that are white, pink, or purple will eventually appear. These flowers attract bees because they have sweet nectar inside. Finally, the plant grows hairy pods that hold a few seeds each.

Scientists believe people first grew them in north-central China. This happened between 6,000 and 9,000 years ago. The plant was changed from a wild soybean into the one we use today. The name "soy" actually comes from the Japanese word for soy sauce. Even the scientific name, Glycine, comes from a Greek word meaning sweet.

The United States and Brazil are the top leaders in growing soy. Most soybeans are grown to feed livestock like cows and pigs. In fact, three-quarters of all soy is used for animal feed. Since the 1980s, the demand for meat has made soy farming grow much faster. This has even led to changes in the forests of the Amazon.

Soybeans are helpful to both humans and the earth.

They are a "complete protein," which is great for vegetarians. This means they have all the protein parts people need. Soy plants also help the soil stay healthy. They do this by working with tiny bacteria to fix nitrogen in the ground. This makes the soil better for the next crops that farmers plant. This clever trick helps farmers use less fertilizer in their fields.
