It is famous for a savory taste called umami. People enjoy using it as a seasoning in cooking or as a dipping sauce. You might see it served with rice, noodles, or sushi.

Some people even mix it with ground wasabi for dipping. It is so common that many restaurants keep bottles on their tables. This sauce is also shelf-stable, which means it can stay in a bottle for a long time without spoiling.

Making traditional soy sauce is a slow and careful process.

First, soybeans are soaked in water and boiled until they are soft. Next, wheat is roasted and crushed into small pieces. These two ingredients are mixed together with a special mold called Aspergillus oryzae. This mixture is often called koji in Japan. The mixture is then placed into salt brine to begin brewing. Over many months, the mold breaks down the grains to create a dark brown color. Finally, the liquid is pressed out of the solids and filtered.

The history of this condiment stretches back thousands of years.

It began in China during the Western Han dynasty about 2,200 years ago. Long ago, people used fermented fish with salt and soybeans to make seasonings. Eventually, the recipe changed to use soybeans as the main ingredient. By the Song dynasty, the name jiàng yóu became the common term for the liquid. In Korea, records from the 4th century show people using special jars for brewing. These traditions helped soy sauce become a staple in many different cultures.

Soy sauce has traveled all around the globe through trade.

In the 17th century, the Dutch East India Company began exporting it from Japan. By 1737, records show large barrels of sauce being shipped to the Netherlands. In the Philippines, soy sauce was part of the traditional adobo dish as early as 1613. Even in the United States, production started in Hawaii in 1905. While some people once used unkind names for the sauce, it is now loved everywhere. Today, you can find many different brands in almost any supermarket.

Traditional brewing is a slow method that takes 90 to 180 days. This method uses high salt and natural fermentation to create deep flavors. However, there is also a faster method called low-salt solid-state fermentation. This modern way is much quicker, taking only 15 to 30 days to finish. While it is faster and cheaper to make, it may not have the same depth of flavor. Both methods help provide this wonderful seasoning to kitchens around the world.
