It was made from a paste of soybeans. Later, people learned to make it with roasted grain. To make it, you must soak and boil soybeans. Then, you add roasted wheat and a special mold. This mold is called Aspergillus oryzae. The mixture sits in salt water to brew.

Traditional brewing takes a long time. It can take 90 to 180 days. During this time, the mold breaks down the grains. This makes the sauce dark brown. In Japan, this mixture is called koji.
