It comes from places like the town of Gruyères. This cheese is very popular in Europe. It can taste sweet and a little salty. Young cheese tastes creamy and nutty. As it gets older, the taste changes. It becomes earthy and more complex.

People love to melt it in dishes. It is great for cheese fondue. You can also use it in French onion soup. Some people like to grate it on pasta or salads.

Making Gruyère takes many careful steps. Makers heat raw cow's milk in copper vats. They add rennet to make the milk turn into curds. These curds are cut into small pieces. Then, the cheese must ripen in special cellars. This ripening is called affinage. These rooms must feel like natural caves. They must stay very damp and warm.

If the rooms are too dry, the cheese dries out. One special kind is called Le Gruyère Premier Cru. It has won the best cheese award five times!
