It can have small, gritty spots called crystals. People make it by stirring a mix of curd and whey. Curd is the solid part of milk. Whey is the liquid part. Makers stir and drain the mix many times. This makes the cheese firm. They may also salt the curd. Then they press it into a shape. Some makers dry the cheese on racks for a week. They might even use wax to protect it.

Many famous cheeses are granular. Parmigiano Reggiano from Italy is one. Other types include Manchego from Spain and Cheddar from the UK. Some cheeses taste mild at first. They get much sharper after one year of aging.

In the United States, there are rules for this cheese. It must have a certain amount of fat. It also has limits on how much water it can hold. Makers can use milk from cows to start. They may use enzymes to help the milk clot. This helps turn the liquid into a solid mass.
