Blue cheese is a special kind of food. It has blue-green spots or veins inside.

These spots come from a safe mold called Penicillium roqueforti. This mold needs air to grow. To help it, makers poke small holes in the cheese. This lets air reach the inside.

People have eaten blue cheese for a long time. Miners in Austria ate it a long time ago. Legend says a boy found Roquefort cheese in a cave. Gorgonzola is another old blue cheese from Italy. It was made around the year 879. Stilton is a popular kind from the 1700s. Some cheeses have special names. They can only use those names if they are made in a certain place.
