Salt is added through dry salting or brine salting to preserve the cheese. Finally, the cheese must undergo a ripening period of 60 to 90 days. During this time, producers monitor the temperature and humidity very closely. The temperature is usually kept between eight and ten degrees Celsius. The relative humidity is maintained between 85% and 95%.
To grow the characteristic blue veins, the mold requires oxygen. Because the mold is aerobic, it needs air to survive inside the cheese. Makers create this air by puncturing the cheese loaves to make small openings. These holes create air tunnels that allow the mold to grow along the curd-air interface.
