Alpines are famous for making much milk. This milk is good for making cheese and ice cream. People also use it to make soap. This milk has a low fat level. It has about 3.4% fat. It has more sugar than cow's milk. It has 2.3 grams of protein in 250 ml.

To make the best milk, goats need a good life. They need clean water and dry beds. They need good air to breathe. They also need to be left alone to rest.

When a goat gives milk, it must be cooled fast. This stops bacteria from growing. Bacteria are tiny living things. If they grow too fast, the milk spoils. Cold milk lasts three to four weeks. You can freeze it to make it last longer.
