Others might try a milky broth made from pork bones called tonkotsu.

To make the meal even better, people add many different toppings. Common toppings include dried seaweed called nori and fermented bamboo shoots called menma. You might also see sliced pork, scallions, or a special swirled fish cake called narutomaki.

Making a great bowl of ramen involves several important steps and ingredients. The noodles used today are called chukamen, which are made with kansui. Kansui is a special kind of alkaline salt water that gives the noodles their texture.

The broth is the heart of the dish and can take many forms. Some shops make a rich pork broth, while others use chicken or salt. In places like Kitakata, you might find thick, flat noodles in a broth made from pork and dried sardines called niboshi. Each region in Japan has its own special way of preparing these flavors. This variety makes every bowl a new discovery for people who eat it.

The history of ramen is a fascinating journey from China to Japan.

It grew from southern Chinese noodle dishes brought by immigrants. Many of these settlers lived in Yokohama Chinatown during the late 19th century. While the name ramen sounds like the Chinese word lamian, meaning "pulled noodles," the two are actually different. Ramen noodles are usually cut rather than pulled by hand. In 1910, a man named Kan'ichi Ozaki opened the very first specialized ramen shop. It was called Rairaiken and was located in Asakusa, Tokyo. He even hired twelve Cantonese cooks to help him serve the food.

Many important events helped ramen become a national dish in Japan. After World War II, there were big changes in how people ate. Rice was hard to find, so people started eating much more wheat.

Millions of people also returned to Japan from China during this time. In 1958, a man named Momofuku Ando changed everything by inventing instant noodles.
