Many people love it in Chinese, Thai, and Vietnamese cooking. It is a staple for Chinese family-style meals. You can use it in noodle stir-fries like chow mein. It also works well with beef and vegetables. Some people even use it as a topping for food.

Making this sauce can happen in different ways. High-quality sauce comes from reducing oyster broth. Cooks boil oysters in water to make a white liquid. They cook this liquid down until it gets thick. This process is called caramelization. The liquid turns a dark brown color naturally. This method is very expensive to do. Most modern sauces use a faster way. They mix sugar, salt, and water together. They use corn starch to make the sauce thick. They might also add oyster essence for flavor.

People in China began making this sauce long ago. It likely started no later than the mid-1870s. Early cooks used three iron basins to boil oysters. They boiled them for half an hour. Then they dried the oysters on rattan. They might use the sun or a small fire. The water from the basins went into a fourth basin. This turned into a blackish sauce. They could add seawater, salt, or soy sauce to it. Today, machines on automated lines make most of it.

There are many different kinds of oyster sauce. Some versions use mushrooms like shiitake or oyster mushrooms. This is a good choice for vegetarians. These mushroom sauces are often cheaper. Many sauces also include a flavor enhancer called MSG. However, you can now find MSG-free versions too. In the 1800s, people in Europe made it differently. French and English cooks made a white sauce. They used milk and melted butter instead of oyster broth. This was called a variant of sauce blanche.

Oyster sauce is different from fish sauce. Fish sauce is clear and watery. It is very salty and has a strong smell. Oyster sauce is thicker and sweeter. It has a hint of salt but is not as strong. You can find oyster sauce in many famous dishes. These include lo mein, wonton noodles, and cashew chicken. Some dishes even use daikon cake or har gow. It is a very important part of many food cultures around the world.
