Oyster sauce

Oyster sauce is a savory condiment used to enhance many different dishes. It is most famous for providing a rich umami flavor. Umami is a specific savory taste that people enjoy in many foods. Most modern versions are thick, dark brown liquids. This sauce is a staple in Chinese family-style cooking. It is also widely used in Thai, Indonesian, Malay, Vietnamese, and Khmer cuisines.

There are two main ways to produce this sauce. The first method creates "true" high-quality oyster sauce. To make this, cooks boil oysters in water to create an opaque white broth. This broth is then reduced through heating until it reaches a thick consistency. This process causes caramelization, which turns the liquid a dark brown color naturally. No extra salt or additives are needed because the oysters provide all the flavor. However, this traditional method is very expensive to produce.

The second method is used for most commercial oyster sauces today. These are made on automated production lines to reduce costs. Manufacturers create a base using sugar, salt, and water. They then use corn starch to thicken the mixture. To add the specific flavor of oysters, they include oyster extracts or essences. Some companies also add soy sauce or monosodium glutamate, known as MSG, to deepen the color and taste. Some modern versions use caramel to achieve a dark color.

Oyster sauce has a long history of production in China. This likely began no later than the mid-1870s. Early production involved using three iron basins to boil oysters for thirty minutes. After boiling, the oysters were removed and dried on rattan. This drying happened either by the sun or over a moderate fire. The liquid remaining in the basins was moved to a fourth basin. There, it was reduced until it became a blackish sauce. Producers might have added seawater, salt, or soy sauce during this time.

Different varieties of the sauce exist to meet various needs. Vegetarian oyster sauce is a popular, lower-priced option. It is made using mushrooms, such as shiitake or oyster mushrooms, instead of seafood. Some sauces contain MSG as a taste enhancer, but MSG-free varieties are now more available. In the 19th century, European cooking used a different version. French and English cooks made a white sauce called sauce blanche. This version used a base of milk and melted butter rather than reduced oyster broth. Some recipes even used cream to moisten the sauce.

It is important to distinguish oyster sauce from fish sauce. While both are briny, they have very different physical properties. Fish sauce is a clear, watery, and very salty liquid. It also has a much stronger aroma than oyster sauce. In contrast, oyster sauce is viscous and sweeter. It has a hint of salt but lacks the intense smell of fish sauce.

Oyster sauce is used in a wide variety of famous dishes. It adds flavor to noodle stir-fries like chow mein or lo mein. It is also a key ingredient in Chinese-American beef with stir-fried vegetables. Many specific dishes use it, such as cashew chicken, wonton noodles, and Hainanese chicken rice. It is also used in dishes like kai-lan, Buddha's delight, and daikon cake. Some people even use the sauce as a topping for their meals.

In recent years, food safety has become a significant topic regarding these sauces. In 2001, the United Kingdom Food Standards Agency tested various samples. They found that 22% of the oyster and soy sauce samples contained a chemical called 3-MCPD. About two-thirds of those samples also contained another chemical called 1,3-DCP. Experts advise that these chemicals should not be in food because they have the potential to cause cancer. Because of this, authorities like the Australia New Zealand Food Authority have set strict limits on these substances.
