People love salsa because it adds so much flavor to a meal.

There are many ways to make these sauces. Salsa roja is a common red sauce. It usually has cooked tomatoes, chili peppers, onion, and garlic. Salsa cruda is a raw sauce. It uses chopped tomatoes, onions, and jalapeño chilies. You might also try salsa verde. This green sauce is made with cooked tomatillos. Some salsas use fruit like mango or pineapple.

You can even find sweet salsas with habanero peppers. These go well with foods like cheesecake or pound cake.

People have been making salsa for a long time. Traditionally, they used a stone tool called a molcajete. This tool is like a mortar and pestle. Today, many people use a blender to make it quickly. The use of salsa as a dip became very popular in the United States. This happened because of Mexican restaurants there. In the 1980s, tomato-based salsas became very popular. By 1992, more money was spent on salsa than on ketchup in the U.S.

Different regions use different ingredients for their sauces. In Chiapas, people often use fresh green chiles for a base sauce. This base sauce is called chiltomate. It is made from tomatoes and chiles. Some people also make salsas with corn or black beans. In the United States, salsa is used for many things. It can be a dressing for salad. It can also be a marinade for meat. Some people even put it on pizza or pasta.

It is very important to keep salsa safe to eat. Raw sauces can grow germs if they are not kept cold. A study in 2002 found germs in some restaurant sauces. This happened in Guadalajara, Mexico, and in Houston, Texas. The CDC said many food illnesses come from sauces. Keeping salsa in a refrigerator is the key to safety. Using fresh garlic and lime juice also helps. This helps stop certain germs from growing in the sauce.
