Ceviche is a fresh and cold dish made with seafood.

People use fish or shellfish like shrimp, octopus, or squid. The seafood sits in a citrus marinade made of lemon or lime juice. This juice does something very special to the food. The citric acid changes the proteins in the seafood. This process is called denaturation. It makes the fish look and feel cooked without using any heat. Because it is not cooked with heat, it must be eaten very fresh.

This dish is a beloved part of many cultures along the Pacific Ocean.

Making ceviche involves mixing several bright flavors together. Most versions use lime or lemon juice to soak the seafood. Chefs also add sliced onions and chopped cilantro for extra taste. Some places use local chili peppers to add a little heat. In Central America, some people use mustard instead of chili. Mexico is a place where you might see tomatoes or avocado added too.

The way it is served changes depending on where you are. In Ecuador, you might eat it with popcorn or fried plantains. In Mexico, it is often served with crunchy corn tostadas. In Peru, it is frequently paired with sweet potato or corn.

There are many stories about how ceviche began. Some researchers believe it started a long time ago in Peru. The Caral civilization lived there between 3500 BC and 1800 BC. They may have eaten raw anchovy with salt and chili. Later, the Moche people used juice from banana passionfruit. During the Inca Empire, people marinated fish with a drink called chicha. Other historians think the dish grew from traditions brought by Spanish explorers. They suggest that Moorish influences from Spain helped create the recipe we know today.

Ceviche is very important to the country of Peru. It is actually the national dish of Peru. UNESCO even recognizes it as a special part of human heritage. In the 1970s, a new style of ceviche became popular. Peruvian-Japanese chefs like Dario Matsufuji and Humberto Sato helped create it. They used a method similar to Japanese sashimi. This modern way uses a very short marinating time. This means the fish is served almost immediately after being mixed.

This keeps the seafood very fresh and bright.

Today, ceviche shows how different cultures can come together. In Peru, many different types of fish are used. You might find sea bass or even shark in certain areas. Some people even drink the leftover marinade. They call this delicious liquid leche de tigre, which means tiger's milk. In Chile, chefs might use grapefruit juice and mint. In Colombia, people often serve shrimp cocktails with crackers. No matter how it is made, ceviche is a wonderful way to taste the ocean.
