It uses fish or shellfish. The seafood sits in citrus juice, like lemon or lime. This juice does something very cool. It changes the proteins in the seafood. This makes the fish look cooked, even without heat!

Many countries make their own version. It is very important in Peru. In fact, it is the national dish of Peru. UNESCO calls it a special part of human culture.

Each place adds its own flavors. In Mexico, people might add tomato sauce or avocado. They often eat it with crunchy tostadas. In Ecuador, you might find it with fried plantains or popcorn. In Chile, chefs use lime and grapefruit juice. Some even add mint!

In Peru, you can eat it with sweet potato or corn. Some people drink a small glass of the juice. They call this leche de tigre, which means tiger's milk. It is a bright and tasty way to enjoy the ocean.
