Some use a red sauce called salsa roja. This sauce is made from dried red chili peppers. Others use a green sauce called salsa verde. Some people prefer a white sauce made from milk or cream. This style is called enchiladas suizas, or Swiss-style. These were named after Swiss immigrants who started dairies in Mexico. You might also find enfrijoladas, which use a sauce made from refried beans. There are even enchiladas montadas, which are stacked on top of each other.

This way of eating has a very long history in Mexico. The practice of rolling tortillas around food goes back to the Aztec times. People living near the lakes in the Valley of Mexico used to roll tortillas around small fish. The ancient Nahuatl word for enchilada was chīllapītzalli. This word combines the words for chili and flute. In the 1800s, enchiladas were written about in early cookbooks. One was called El cocinero mexicano, published in 1831. Another was the Diccionario de Cocina, published in 1845.

Different places have their own special versions of this dish.

Enchiladas show how many ways people can use corn and chilies. You can find them as simple street food or as fancy meals. They connect many different cultures across Mexico and Central America. Some use cheese like queso fresco or queso Oaxaca as a topping. Others add fresh cilantro, avocado, or sour cream. Whether they are rolled, stacked, or topped, they are a beloved part of many meals. Every region adds its own unique flavor to the tradition.
