Most sauces use chili peppers as a base. Many recipes add salt and vinegar. Vinegar helps keep the sauce fresh. Some makers add fruits or vegetables for flavor. They might use mango or carrots.

In Mexico, many sauces focus on flavor. They often use chipotle peppers. In the United States, Tabasco is a very famous brand. It first appeared in 1868. Some people like Louisiana-style sauces. These often use cayenne peppers.

Why does it feel hot? A part of the pepper called capsaicin causes the heat. This creates a burning feeling in the mouth. We can measure this heat with the Scoville scale. This scale shows how many times you must dilute the sauce with water to stop the heat. Some peppers, like the ghost pepper, are very hot. Others are mild and taste like ketchup.
