It has a rich and tangy taste. People love to put it on sandwiches and burgers. It is also great on French fries. Many people use it to make other sauces. These include ranch dressing and tartar sauce.

To make it, you mix oil and egg yolk. You also add vinegar or lemon juice. This mixture is called an emulsion. An emulsion happens when two things that do not mix stay together. In mayo, the yolk helps the oil and water stay joined.

You can make it by hand with a whisk. You can also use an electric mixer. You must add the oil very slowly while you stir fast.

Some people do not eat chicken eggs. They may have allergies or follow a vegan diet. These people can use egg-free mayo. This version uses pea or soy protein to hold the oil together.
