Sichuan cuisine is a famous style of cooking from China. It comes from the Sichuan province and the Chongqing area. People love this food because it has very bold and fiery tastes.

It is known for being both spicy and pungent. This happens because cooks use lots of garlic and chili peppers. They also use a special spice called the Sichuan pepper. This pepper has a bright citrus scent. It creates a unique feeling called "numbingly spicy" in your mouth.

This combination of heat and numbness is a key part of the experience.

Making these dishes involves many different flavors and steps. The cuisine uses seven basic tastes: sweet, sour, numbingly spicy, spicy, bitter, fragrant, and salty.

Cooks often use a thick paste made from broad beans. This paste is a main ingredient in dishes like Mapo tofu. Another famous style is "twice-cooked pork." In this method, the fresh pork is first boiled and then fried in a wok.

Some meals are served as big banquets for special guests. Other meals are simple snacks or household foods. You might even find "water-cooked meat" which is steamed with sweet pork and sticky rice.

This way of cooking has a very long history. It is thought to have started during the Spring and Autumn period. The food grew even more during the Tang and Song Dynasties.

During the Ming and Qing dynasties, the cuisine kept developing. A major change happened during the Kangxi period. This was when chili peppers were first introduced to Sichuan.

Before the chilies arrived, the food was different. The chilies likely came from Mexico through India or Macau. They joined the traditional Sichuan peppercorns to create the modern taste we know today.

Many different regions have their own specific styles. The Shanghebang style comes from Chengdu and Leshan. It uses rich seasonings but has a lighter taste.

There are also different types of banquets, from grand ones to ordinary ones.

The land itself helps decide what people eat. Sichuan has mountains, hills, and a large basin. The fertile basin grows plenty of rice and vegetables.

In the high mountains, people find many herbs and mushrooms. Pork is the most common meat used in meals. Beef is also common because people use oxen in the region.

Rabbit meat is very popular there too. In fact, the Sichuan area uses about 70 percent of China's total rabbit meat. In 2011, UNESCO even named Chengdu a city of gastronomy.
