People love them because they are tasty and spicy. The name dandanmian means noodles carried on a pole. This name comes from how street vendors sold them long ago. These sellers carried a pole over their shoulders. Two baskets hung from the ends of the pole. One basket held the noodles. The other basket held the sauce. This made the noodles cheap for local people to buy.

The dish has many parts that create a strong flavor. It uses wheat noodles and a spicy sauce. The sauce usually has chili oil and Sichuan pepper. It also includes minced pork and pickled vegetables. Some vegetables used are zha cai or ya cai. These are parts of the mustard plant. To finish the dish, people add peanuts and scallions on top. You can eat them in two different ways. The Chengdu style is served dry in a small bowl. The Hong Kong style is served as a noodle soup. The soup version is less spicy and may have sesame paste or peanut butter.

History tells us how these noodles moved to other places. The Chengdu style is the traditional way in Sichuan. However, the Hong Kong soup style is very common in other parts of China. You can also find it in Chinese restaurants all over the world. This dish even traveled to Japan. A chef named Chen Kenmin introduced it there. In Japan, people call the dish tantanmen. Some people in Japan even think of it as a type of ramen.

Some chefs use amazing skills to make special noodles. A chef named Li Hong-kai invented jinsimian in 1989. These are called "gold thread noodles." He used a special way to knead the dough. This kept the noodles from getting mushy when they cooked. These noodles are so thin they can fit through a needle. Li Hong-kai once held a Guinness World Record for this. He threaded 45 noodles through a needle. Another person named Li Enhai beat that record in 2010. Li Enhai threaded 47 noodles through a needle. He also made the thinnest noodle at 0.18 mm.

You might see these flavors in other foods too. The spicy sauce is often used on bang bang chicken. It is also used on meat-filled dumplings. These dumplings are called suanla chaoshou in Sichuan. Many chefs today still use jinsimian to make dandan noodles. It is a way to show great skill. Whether they are thick or thin, these noodles are a special part of food culture. They show how a simple street food can become a world favorite.
