The name means noodles carried on a pole. Long ago, street sellers carried the food this way. They held a pole over their shoulders. Two baskets hung from each end. One basket held noodles. The other held the sauce. This dish was cheap for local people to buy.

The noodles have a spicy sauce. The sauce uses chili oil and Sichuan pepper. It also has minced pork and pickled vegetables. People often top the dish with peanuts and scallions. There are two main ways to eat them. The Chengdu style is served dry in a small bowl. The Hong Kong style is served as a noodle soup. This soup is not as spicy. It might even have peanut butter in it.

Some chefs make very thin noodles. A chef named Li Hong-kai made gold thread noodles. He used a special way to knead the dough. These noodles are so thin they fit through a needle.
