It comes from the dried outer shell of a fruit. It is not like black pepper. It is in the same family as citrus fruits.

When you eat it, your mouth feels a strange sensation. It creates a tingling or numbing feeling. This happens because of a special part called hydroxy-alpha sanshool. Some people say it feels like a tiny vibration in the mouth.

Many people love this spice in their food. In China, it is used in Sichuan cooking. It is a key part of mala sauce. Mala is a mix of Sichuan pepper and chili peppers.

You can find it in Chongqing hot pot.

People in the Himalayas use it too. It is used in Nepali momo dumplings. In Bhutan, it is used in snacks and noodles. Some people even use the leaves in soups. You can use the whole shell or ground powder. Some chefs even make a special oil from it. This oil adds flavor without the gritty texture of the shells.
