Some raisins have special names based on their type. Sultanas are golden-colored dried grapes. Zante currants are small, dark, and have a tart, tangy flavor.

There are also large, sweet Muscat raisins. In the Middle East and Asia, people use large black monukka grapes to make big raisins.

Making a raisin is a careful job because water must leave the grape. This is hard because the grape skin has a waxy layer. This wax is meant to keep water inside the fruit. To help, workers use a pre-treatment step first. This helps the water move to the surface much faster. Some people use a dip made of potassium carbonate to speed this up. For golden raisins, a treatment of sulfur dioxide is used before drying. This helps them keep their bright color and vitamins.

There are three main ways to dry the grapes.

The first way is sun drying, which is an inexpensive method. However, sun drying can sometimes lead to issues with insects or microbes. The second way is shade drying. The third way is mechanical drying using machines called dehydrators. These machines keep the temperature and humidity under control. One special way is microwave drying. This uses energy to make water evaporate quickly and creates puffed raisins.

After the grapes are dry, they go to a processing plant.

Workers wash the raisins with water to clean them. This removes any tiny objects that might have stuck to them. They also remove stems and raisins that are not the right grade. Because washing adds moisture back, the raisins must be dried one more time. This ensures they stay dry and ready to eat. In the 2023–24 year, the world made 1.1 million tonnes of raisins.

Many different countries help feed the world these sweet treats.

Turkey, China, Iran, and the United States are the largest producers. Raisins are full of energy because they have many carbohydrates. They also provide minerals like potassium and copper. You might find them in an oatmeal raisin cookie or a raisin cake. Just remember that raisins can be unsafe for cats and dogs. They can cause kidney failure in these pets, so keep them away from animals.
