A raisin is a dried grape used globally in various foods.

People consume them raw or use them in cooking, baking, and brewing. While many people use the word raisin for dark, seedless dried grapes, other specific names exist. Sultanas are golden-colored dried grapes, often made from Thompson Seedless varieties in the United States. Zante currants are small, dark, seedless grapes known as Black Corinthian raisins.

These currants have a distinct tart and tangy flavor. Other varieties include sweet Muscat raisins and the large black monukka grapes used in Asia and the Middle East.

Producing a raisin requires removing water from the interior of the grape cells.

This water must move to the surface so it can evaporate. This process, called diffusion, is difficult because of the grape's natural defenses. The skin contains a waxy layer called a cuticle that prevents water from passing through. Additionally, chemical and physical mechanisms on the outer layers are adapted to prevent water loss. To overcome this, commercial producers use a three-step process involving pre-treatment, drying, and post-drying.

Pre-treatment is the first essential step to increase the rate of water removal.

Faster water removal helps decrease the rate of browning. This results in more desirable, high-quality raisins. Historically, producers in the Mediterranean and Asia Minor used a cold dip. This emulsion contained potassium carbonate and ethyl esters of fatty acids. This method could increase the rate of water loss by two to three times. Modern methods include using oil emulsions or dilute alkaline solutions to encourage water transfer.

Special treatments are used to create specific types of raisins. To produce golden raisins, producers apply sulfur dioxide after pre-treatment but before drying.

This chemical prevents browning caused by the reaction between phenolic compounds and polyphenol oxidase. Sulfur dioxide also helps preserve the flavor and prevents the loss of certain vitamins. This step is vital for maintaining the bright color of sultanas. Without this treatment, the grapes would likely turn a darker color during the drying process.

There are three primary methods for the drying stage. Sun drying is an inexpensive method used by many producers. However, this method carries risks of insect infections, microbial deterioration, or environmental contamination. Shade drying is another traditional option. Mechanical drying uses dehydrators to provide a safer, more controlled environment. This method guarantees rapid drying through controlled temperature and humidity. One advanced technique is microwave drying, where water molecules absorb energy to evaporate quickly. This specific method produces raisins that are puffed in texture.

Once drying is complete, raisins move to the post-drying stage at processing plants.

The raisins are washed with water to remove foreign objects that may have become embedded. During this stage, workers also remove stems and off-grade raisins. Because the washing process can cause rehydration, a second drying step is necessary. This final drying ensures that any added moisture is completely removed. This careful sequence ensures the raisins are clean, consistent, and shelf-stable.

Global raisin production is a massive industry. In the 2023–24 period, estimated global production reached 1.1 million tonnes. Turkey, China, Iran, and the United States are the largest producers in the world. From a nutritional standpoint, raisins are highly concentrated in energy. They consist of 79% carbohydrates, including 4% fiber, and 3% protein. They are also 15% water and contain negligible fat. They provide moderate amounts of riboflavin and vitamin B6. They are also rich in minerals, providing over 20% of the Daily Value for potassium and copper.

While raisins are healthy for humans, they pose a danger to certain animals. Raisins can cause kidney failure in both dogs and cats. Scientists do not yet know the exact cause of this toxicity. Beyond nutrition, raisins appear in many cultural contexts. They are used in raisin cakes, oatmeal raisin cookies, and even chocolate-covered candies. They have even inspired fictional characters, such as the California Raisins music group. This small dried fruit remains a staple in kitchens and industries worldwide.
