This process is useful for several reasons. It creates a sweet taste and a long shelf life. Because the water is gone, the fruit becomes a stable food. People can eat it on its own or use it in cooking. Today, dried fruit consumption is widespread across the entire world.

There are several ways to remove moisture from fruit. Some fruit is dried naturally using the sun. Other fruit is processed using industrial dehydrators. A different method is called freeze drying. In this process, the fruit is first frozen. Then, it is placed in a drying chamber under a vacuum. Heat is applied so the water evaporates while the fruit is still frozen. This makes the fruit very light and crispy.

Dried fruits can appear in many different forms. Some are dried whole, such as grapes, berries, apricots, or plums. Others are prepared in halves or as slices, like mango, papaya, or kiwi. Some fruits are chopped after they are dried, such as dates. You can also find fruit made into pastes or concentrated juices. Another form is fruit leather. This is made by spreading fruit puree until it is thin. It is then dried into stripes.

Dried fruit has a very long history dating back to the fourth millennium BC. It was a staple in the Mediterranean region. This was due to early cultivation in the Fertile Crescent. This area includes parts of modern Iran, Iraq, Turkey, Syria, Lebanon, Palestine, and Egypt. Early hunter-gatherers may have eaten grapes or figs that fell from plants and dried in the sun.

They also added dried fruits to their breads. In ancient Rome, raisins were a key part of common meals.

Dried fruit is also used for specific chemical and nutritional reasons. Food manufacturers use it in sauces, soups, and even infant food. Some fruits, like golden raisins, are treated with sulfur dioxide. This is an antioxidant that protects the color and flavor of the fruit. It prevents browning reactions in peaches, apples, and apricots.
