Freeze drying is a special way to remove water from things. This method is also called lyophilization or cryodesiccation. Most ways to dry things use heat to turn water into steam. Freeze drying is different because it uses very low temperatures.

The way it works happens in four main steps. First is pretreatment, where things might be mixed with other ingredients. Next is freezing the material until it is very cold. This step is critical because it prevents the ice from melting later.

The third step is primary drying, where pressure is lowered using a vacuum. This causes sublimation, which is when ice turns straight into gas. This step removes about 95% of the water. Finally, secondary drying removes the last bits of water.

Freeze drying became very important during World War II. Doctors needed blood plasma and penicillin for wounded people. These supplies often spoiled because they could not stay cold during travel. Freeze drying made them stable without needing a refrigerator.
