Fractional freezing

technology Maturity 11-13 Next article →

Fractional freezing is a clever way to separate different parts of a mixture. It works by using the different melting points of substances. Some things freeze into solids more easily than others. This method is very useful in science and engineering. It can help make very pure solids. It can also make certain liquids much stronger. Scientists use it to concentrate liquids that might break if they are heated.

One way this works is through a process called freeze distillation. This happens when you cool a liquid mixture down. For example, water and ethanol mix together very well. However, ethanol does not stay inside water ice. As the mixture gets cold, almost pure water ice forms. This ice can be removed by filtering or decanting. The liquid left behind now has a higher concentration of ethanol.

People have used these ideas for a long time. In the past, people would leave barrels of beer outside to freeze. They would then remove the ice to make the drink stronger. This created drinks like applejack, which is made from hard cider. There is also ice beer. Another famous example is ice wine. In that case, the grapes freeze before they are fermented. This concentrates the sugar instead of the alcohol.

There are many specific facts about how these mixtures behave. For ethanol and water, there is a special point called the eutectic point. At this point, the mixture reaches a maximum ethanol strength. This happens at about 92.4% ethanol by weight. It occurs at a very cold temperature of −123 °C. You can find these specific ratios on a phase diagram. This is a special chart that shows how things freeze.

This process also happens in nature and helps us in other ways. Sea ice uses fractional freezing to push salt out. This is called brine rejection. Because salt lowers the melting point, the salt is forced out of the freezing water. This can eventually make sea water drinkable after many runs. We also use this to make fruit juice concentrates. It is a simple way to work with heat-sensitive liquids. It can even help make alternative fuels like biodiesel better.
