Fractional freezing

technology Maturity 11-13 Next article →

Fractional freezing is a way to separate things. It works by using different melting points. Some parts of a mix freeze easily. Other parts do not freeze as fast.

One way to use this is freeze distillation. This is a way to make a liquid stronger. For example, water and alcohol mix well. But alcohol does not stay in ice. When you freeze the mix, pure ice forms. The liquid left behind has more alcohol. People use this to make applejack and ice beer.

This method can also make fruit juice sweet. It is used to make ice wine. The grapes freeze before they are fermented. This makes the sugar more concentrated. This is good for liquids that might break if heated.

We can even use it to clean sea water. Salt makes water harder to freeze. When sea water freezes, the salt is pushed out. This is called brine rejection. The ice left behind has less salt. After doing this many times, the water is drinkable. This can help make fresh water from the sea.
