Drying is a way to remove water or other liquids from a material.

This process is very important before companies sell or package their goods. It turns things into solid forms we can use every day. You might see dried products as thin sheets like paper. They can also be long pieces like wood. Some items come as small particles like cereal grains. Other things appear as a fine powder like salt or milk powder. Drying helps make these items stable for a long time.

Most drying works by moving liquid into a gas.

One common way is using warm air. This is called convection. The warm air carries away the water vapor as humidity. Another way is vacuum drying. In this method, a vacuum system pulls the vapor away. Some machines use a hot surface to provide energy. This is called drum drying. It is used to make things like potato flakes. Some researchers even use microwaves to speed up the end of the process.

There are different stages to how a product dries. At first, the water on the surface leaves very quickly. This is called the constant drying rate period. During this time, the speed depends on how much heat moves into the material. Later, the water inside the object must move to the surface. This is called the falling rate period. The water moves from wet areas to drier areas. This movement is known as molecular diffusion. As water leaves, the object might shrink or change shape.

People use many specific methods for different needs. Freeze drying is a special way to dry things.

First, the liquid is frozen into ice. Then, it turns directly into a gas. This is called sublimation. It happens below the melting point. This method is great for food and medicines. It helps keep vitamins and proteins safe. Another method is supercritical drying. This uses superheated steam to dry a product. It can even recover heat to use again.

We see the results of drying all around us. In the food industry, drying stops germs from growing. It also keeps fruits and vegetables from browning. Drying cereals after a harvest helps them stay safe in storage. It can even make crackers have a crispy texture. We also use drying for non-food items. Wood and paper need to be dry so they do not grow mold. Even waste from sanitation plants is dried. This helps kill pathogens and makes the material ready for burning.
