Vacuum drying

technology Maturity 11-13 Next article →

Vacuum drying is a special way to remove moisture from wet solids. This method is very important in many big industries. People use it for food, medicine, and farm goods. It is also used for making textiles. Some items are hygroscopic, which means they soak up water easily. Other items are heat-sensitive and might break if they get too hot. Vacuum drying helps these delicate things stay safe while they dry.

This process works by using a vacuum pump to change the pressure. The pump pulls air out of a chamber. This lowers the pressure around the substance. Lower pressure makes the boiling point of water go down. This means water turns into steam at a much lower heat. Because the water boils sooner, it evaporates much faster. This makes the whole drying task happen more quickly.

A vacuum dryer is the machine used for this job. Most dryers are made of stainless steel. This metal is strong and does not bend under high pressure. Some older ones might be made of cast iron. Inside, the machine has hollow trays to hold the wet items. These trays help heat move through the material. The door must be locked air tight to keep the vacuum inside.

To dry the items, steam passes through a space called a jacket. This space is between the trays and the jacket. The heat moves into the trays through conduction. This is a way that heat travels through solid objects. The water vapor then moves into a condenser. This is useful if the liquid needs to be saved. In 1989, a new method called microwave vacuum drying became known. This uses microwaves to speed up the work even more.

This technology helps keep food looking and tasting good. Regular drying can change the color or texture of food. This can happen because of a thing called the Maillard reaction. Microwave vacuum drying helps avoid these changes. It also lowers the temperature used in the system. This keeps the drying cycle short and safe for the product. It is a great way to preserve fruit and medicine.
