Vacuum drying

technology Maturity 11-13 Next article →

Some things are hard to dry. Heat can change them. A vacuum dryer helps. This machine dries wet solids. It is used for food and medicine. It is also used for farm goods and cloth. Many dryers are made of stainless steel. This metal stays strong under high pressure.

A vacuum dryer works in a special way. It uses a vacuum pump. This pump pulls air out of the machine. This lowers the pressure inside. Lower pressure makes water boil faster. It also lowers the boiling point. This means water turns to steam at a lower heat. This helps things that are heat-sensitive. These are items that might break if they get too hot.

Inside the dryer, items sit on hollow trays. Steam passes between the trays and a jacket. This helps heat move to the food. This way of moving heat is called conduction. The water vapor goes to a condenser. This helps save the liquid. Some people use microwaves to help too. This is called microwave vacuum drying. It makes the drying time much faster. It also helps keep the food's color and texture good.
