Making molasses is a step-by-step process. First, workers harvest sugarcane and strip away the leaves. They then extract the juice by crushing or mashing the stalks. Next, the juice is boiled to create a concentrate. This boiling helps sugar crystals form. The first boiling creates first syrup, also called 'A' molasses. This type has the highest sugar content.

There are different stages of boiling. A second boiling produces second molasses, or 'B' molasses. This version has a slightly bitter taste. If the syrup is boiled a third time, it becomes blackstrap molasses. This is 'C' molasses. It is the darkest type and has a very robust flavor. The word "blackstrap" might come from a Dutch word for syrup. This process removes most of the sucrose from the original juice.

Molasses has a long history in many places. It was very popular in the Americas before the 20th century. During the time of the colonies, people used it to brew beer. Even George Washington had a recipe for molasses beer in a notebook. On Madeira Island, it is a key part of traditional cooking. There, people call it mel-de-cana, which means "cane honey" in Portuguese. This tradition goes back to the golden age of sugar on the island.

Molasses is much more than just a sweetener. It is a rich source of many nutrients. One tablespoon of blackstrap molasses can provide 20% of the daily value for iron, calcium, magnesium, and manganese. It also contains vitamin B6 and potassium. People use it for many jobs outside the kitchen. It can be used to make rum or even ethanol. It is also used in mortar for brickwork. Some people even add it to soil to help microbes grow.
