These trees belong to the cashew family. People all over the world love eating them as a snack. You can find them in many tasty treats. They are used in ice cream, chocolate, and candy. Some people even use them to make butter or paste. They are also part of special dishes like baklava or pulao rice. Because they are a tree nut, some people must be careful. They are a priority allergen that can cause reactions in some people.

Growing pistachios is a very interesting way to farm.

The trees are unique because they are dioecious. This means there are separate male and female trees. One male tree can provide enough pollen for 8 to 12 female trees. The fruit is actually a drupe, which is a fleshy fruit with a seed inside. The seed has a light green color and a special flavor. It sits inside a hard, cream-colored shell. When the fruit is ripe, the shell splits open with a loud pop! This process is called dehiscence.

These trees have a very long history.

They are native to Iran and Central Asia. Scientists found evidence that people ate them as far back as 6750 BCE. In the first century AD, the Romans brought the trees to Europe. Long ago, the Hanging Gardens of Babylon might have had these trees too. In the 1800s, they were grown in places like New Mexico and California. By 1976, California had its first big commercial harvest. Today, the trees can live for up to 300 years.

There are many important numbers to know about pistachios.

In 2024, the whole world produced 1.4 million tonnes of them. Three places grow most of the world's supply. The United States, Iran, and Turkey make up 87% of the total. A single mature tree can produce about 50,000 seeds every two years. In the United States, California grows 99% of the country's pistachios. In Iran, there are about 150,000 pistachio farmers. Many of these farmers are small-scale producers.

To grow well, these trees need specific things. They are desert plants that can live in salty soil. They love long, hot summers to help the fruit ripen. However, they do not like high humidity. Too much water in the winter can cause root rot. They also need plenty of bright sunshine. Farmers often prune the trees to make them a good size. This makes it much easier to harvest the seeds. In the United States, machines are often used to shake the fruit off the trees.
