This simple idea creates many different kinds of drinks. Some are hot and some are served cold with ice. One man named Johan Nieuhof is a famous name in this history. He was a Dutch ambassador to China. He is credited as the first person to drink coffee with milk. He likely tried this experiment around the year 1660. This small change turned coffee into a huge category of drinks.

There are many ways to build these drinks.

For a latte, you mix espresso with steamed milk. This usually uses a ratio of one part espresso to three or five parts milk. A breve uses a mixture of half milk and half cream. In Israel, a drink called cafe hafuch is made in an "upside down" way. This means the steamed milk goes in the cup first. Then, the espresso is added carefully on top to create layers. Some people even add milk foam to the very top.

Different countries have their own special recipes.

In Vietnam, people make egg coffee in the Central Highlands. This drink uses egg yolks, sugar, and condensed milk with Robusta coffee. Spain has a drink called cafe bombón. It uses espresso and sweetened condensed milk in a 1:1 ratio. To make it look beautiful, the milk is poured slowly. It sinks to the bottom to create two separate bands of color. People in the Canary Islands serve a similar version called cafe proprio. This uses a type of espresso called espresso lungo.

Many traditions have traveled across the globe.

The flat white became popular in New Zealand during the late 1980s. It later spread to the United Kingdom. Owners from Australia and New Zealand brought it to London cafes. Now, even big coffee chains serve it in the United States. In Indonesia, Kopi susu is a very popular choice. It uses black Arabica coffee and sweetened condensed milk. If you add palm sugar and ice, it becomes es kopi susu gula aren.

Some drinks are all about the texture and toppings. In Austria, you can find a Wiener coffee. This is coffee or espresso topped with whipped cream. You might even see vanilla, chocolate, or cinnamon sprinkled on top. Another Austrian drink is the Wiener melange. It is similar to a cappuccino but uses milder coffee. In Portugal, people enjoy a hot drink called galão. This is made with espresso and foamed milk in a tall glass. Even in New England, people have their own way. They call a drink with cream and sugar "coffee regular."
