Most limes are round or oval in shape. They usually have green skin and green flesh inside. Some limes may turn yellow when they are fully mature. These fruits grow on small, evergreen trees or shrubs. These trees have shiny leaves and white flowers that smell nice.

Limes are very important for many different reasons. People use them in food and for medicine. They are also used to make things look pretty.

Limes work by providing a very strong, sour flavor. This happens because they have a lot of citric acid. This acid is much higher than in other fruits. For example, lime juice has five times more acid than orange juice.

The juice is also very watery, with 88% being water. Most limes are picked while they are still green. This is when their flavor and acidity are the strongest. This sourness is what makes them so special in cooking.

Limes have a very long history of travel. They first began in tropical Southeast Asia and South Asia. Humans moved them to new places through trade and migration. Limes reached Micronesia and Polynesia a long time ago. By 1200 BCE, they reached the Middle East through the spice trade.

In the 1800s, British sailors ate limes to stay healthy. This helped them prevent a sickness called scurvy. Because of this, sailors were sometimes called "limeys."

There are many different kinds of limes to find. Key limes are small and often have many seeds. Persian limes are larger and have almost no seeds.

The Makrut lime is bumpy and has a strong smell. Some limes come from Australia, like the finger lime. In 2023, the world grew 23.6 million tonnes of limes and lemons. India and Mexico were the leaders in growing these fruits. This shows how much the world relies on them.

Limes connect to many things you might see every day. You might taste them in limeade or in guacamole. Some people even use them in desserts like Key lime pie.

Beyond food, lime oils are used in perfumes. You might even find lime scents in cleaning products. Be careful if you get lime juice on your skin. If you go into the sun after, it can cause a skin reaction. This is sometimes called margarita photodermatitis.
