The lemon is a small, yellow fruit that comes from an evergreen tree.

This tree belongs to the Citrus genus. A true lemon is actually a hybrid. This means it is a mix of two different plants. It is a cross between the citron and the bitter orange.

People all over the world use this fruit. They mostly use it for the juice inside. The juice is very sour to the taste. This sourness comes from having about 5% to 6% citric acid. This acid is much stronger than the acid found in orange juice.

Each lemon has a very specific way it is built. Botanists call the fruit a hesperidium. This is a type of modified berry with a tough, leathery rind. The rind has two different layers. The outer layer is called the zest. It is full of aromatic essential oils. The inner layer is a white, spongy part called the pith. Inside the fruit, there are segments called carpels. These segments contain small spaces called locules. These locules are filled with tiny juice vesicles that hold the liquid.

We do not know exactly where lemons first began. Some evidence suggests they came from northeastern India during the 1st millennium BC. The word lemon may come from Middle Eastern languages. It traveled through Arabic and Italian before reaching English. Lemons reached Europe near southern Italy during the time of Ancient Rome. Later, they moved to Persia, Iraq, and Egypt around 700 AD. In the 15th century, people began growing them in large amounts in Genoa. Christopher Columbus brought lemon seeds to Hispaniola in 1493. This helped spread the fruit to the Americas during the Columbian exchange.

Today, lemons are grown in huge amounts across the globe. In 2024, world production reached 23 million tonnes. India and Mexico are the leaders in growing them. Together, these two places provide 31% of the world's total. There are many different types of lemons to find. The 'Eureka' is a common supermarket lemon. It can grow fruit and flowers all year long. The 'Lisbon' lemon is also very common in stores. It is smoother and has a thinner skin than the Eureka. Some people even grow 'Meyer' lemons in their own gardens.

Lemons are useful for much more than just a sour drink. You can use the zest to add flavor to baked goods. The juice can help keep sliced apples from turning brown. This happens because the acid stops a process called oxidation. In cooking, the acid can even make tough meat more tender. You can even use a lemon to make a simple battery. By attaching electrodes to a lemon, you can produce a tiny bit of electricity. This is enough to power a small digital watch. It is amazing how much we can do with one small fruit.
