It is made from brewed coffee beans that have been turned into solids. These solids can look like fine powder or tiny crystals. To make a cup, you simply add hot water or milk to the coffee and stir. This method is very fast because the coffee dissolves quickly. It is also easy to clean up since there are no messy grounds left behind. Many people like it because it is light and easy to ship to different places.

Making this coffee involves a few important steps. First, green coffee beans are roasted in rotating cylinders with hot gases. This roasting takes about 8 to 15 minutes to finish. After the beans cool, they are ground into very fine pieces. Next, hot pressurized water is used to extract the flavor and aroma. This liquid is then made stronger through evaporation or freeze concentration. To turn the liquid into dry bits, companies use two main ways. One way is called freeze-drying, which uses a vacuum to remove water.

Another way is spray drying, which uses heat to dry the liquid in seconds.

The history of instant coffee is quite interesting. Long ago, during the American Civil War, soldiers used a thick mixture called Essence of Coffee. It was very thick, like axle grease, and the troops did not like it. Later, in 1876, a brand called Camp Coffee was made in Scotland. The real patent for soluble coffee was filed in 1889. David Strang of Invercargill, New Zealand, received the patent in 1890. He sold his product under the name Strang's Coffee. Later, a brand named Nescafé was launched in 1938 with a new refining process.

There are many different ways people use instant coffee around the world. In South Korea, you can find "coffee mix," which includes sugar and creamer. In Greece, people use it to make a cold drink called a frappé. In countries like Portugal, Spain, and India, people often mix it with hot milk. In the United Kingdom, it is very popular and makes up over 75 percent of coffee bought for homes. People there even use granules to add flavor to spaghetti Bolognese sauce. Even artists use it! You can use coffee as a dye to make paper look old.

Instant coffee is a huge part of the global coffee industry. In fact, nearly 50 percent of the world's green coffee is used to make it. While it is convenient, the caffeine levels can be different from regular brewed coffee. A study showed that a cup of instant coffee had a median of 66 mg of caffeine. This is lower than the 112 mg found in a cup of drip coffee. Some people also use it for science, like making a photographic developer called Caffenol. This special mix uses coffee, vitamin C, and sodium carbonate to develop black-and-white photos. It is amazing how one simple ingredient can do so many things.
