It is often called salty tea or Mongolian salty tea. This warm beverage is a very common part of daily life. People drink it during meals or throughout the whole day. It is also a way to welcome visitors. When guests arrive at a ger, which is a Mongolian home, they are served tea. Usually, the tea comes with a bowl of snacks to enjoy.

Making this tea involves a few simple steps. Most recipes use water, milk, tea leaves, and salt. One recipe might use one quart of water and one quart of milk. It might also use one tablespoon of green tea and one teaspoon of salt. Some people choose to use black tea instead of green tea. To make the drink taste very rich, some people add butter or fat. They might even add tail fat for extra flavor. Some people also add fried millet to the cup.

There is a traditional way to prepare the tea. You can stir it by scooping the liquid up while it boils. Then, you pour it back into the pot from a height. Many people do not do this step today. The tea often comes from a hard block. This block is made of tea leaves and stems pressed together. It is easy to store this way. When you are ready, you just chip off pieces of the block.

Milk is a very important part of the Mongolian diet. It can come from many different animals. People use milk from cows, sheep, or goats. They also get milk from camels, horses, yaks, or cattle. In the past, Mongols had a special belief about water. They thought water was sacred and like a god. Because of this, they did not like to drink pure water straight. A friar named William of Rubruck wrote about this in the mid-thirteenth century. He noted that the Mongols were very careful not to drink pure water.

Because juice and wine were not easy to find, people drank milk products. They might drink suutei tsai or airag, which is fermented mare's milk. Some people find the salty taste of the tea new or different. It is an acquired taste for some foreigners. You can eat the tea with buuz, which are dumplings. You can also eat it with boortsog, or fried biscuits. Today, you can even find suutei tsai in instant packets.
