It sits right between green tea and black tea. This means its flavor is often more complex than green tea. However, it is not as strong as black tea. People call it "black dragon" tea in some places. This name comes from its dark, long, and curly leaves.

Many people in southeastern China love drinking it. It is also very popular among Chinese people in Southeast Asia.

Making oolong tea is a very careful job. It involves a thing called oxidation. This is when leaves change color. Workers start by withering the leaves under a strong sun. Then, they let some oxidation happen before curling the leaves. This process can change a lot. The amount of oxidation can range from 8% to 85%.

The leaves can look like long curls. Other leaves are rolled into small beads with tails. Making it requires much more attention to timing and heat than black tea.

The history of the name is quite interesting. No one knows the exact origin for sure. It might have come from a special tea called Dragon-Phoenix Tea Cake. The name "oolong" was first used in a book in 1857. This book was called "Miscellaneous Notes on Fujian."

In Taiwan, people have called it "dark green tea" since the early 2000s. In France, people use the term "blue tea" to talk about it.

Many famous teas come from specific places. In China, the Wuyi Mountains and Anxi County are big centers for tea. One very famous tea from the Wuyi Mountains is Da Hong Pao. It is also known as "Big Red Robe."

Another famous type is Anxi Tieguanyin, which is one of the Ten Famous Chinese Teas. In Guangdong, there is a family of teas called Dancong. These teas can smell like flowers like orchids or fruits like grapefruit.

Taiwan also grows wonderful oolong tea on its high mountains. The weather and soil there change how the tea tastes. One special tea is Jin Xuan, also called "Milk Oolong." It tastes creamy and smooth, but it does not actually have milk in it!

Another type is Dongfang meiren, or "Oriental Beauty." This tea gets its strong smell from being nibbled by tiny insects called Jassids. People often brew oolong using the gongfu method. This means using a small vessel like a gaiwan for many short steepings.
