Unlike black or oolong teas, green tea leaves do not undergo withering or oxidation. This process keeps the leaves green and changes their flavor. People enjoy green tea for many reasons, including its unique taste and aroma. Some varieties are grown in the bright sun. Other types are grown under shade to change how they grow.

You place the leaves in hot water and let them sit. The water temperature should usually stay between 160 and 180 degrees Fahrenheit. If the water is too hot, the tea can taste bitter or astringent. High-quality teas, like the kind called gyokuro, often use more leaves. You can also steep these high-quality leaves multiple times.

A famous book called The Classic of Tea was written by Lu Yu between 618 and 907 AD. Later, in 1211, a Zen priest named Eisai wrote The Book of Tea. This book explains how tea affects the body and how to grow the plants. Green tea began in China during the late 1st millennium BC. Since then, it has spread to many other countries in East Asia.

Today, the world produces a huge amount of green tea every year. In 2013, global production was about 1.7 million tonnes. China is a leader in this market and provided 80% of the world's green tea in 2015. During that same year, China exported 325,000 tonnes of tea. The United States was the largest importer of Chinese green tea in 2015. Britain also imported a lot, with 1,900 tonnes coming in that year.

While many people believe tea is very healthy, scientists say there is not enough evidence to prove most claims. For example, science has not proven that tea helps with weight loss or prevents cancer. However, drinking tea might slightly lower blood pressure. You must be careful not to drink too much tea extract. Taking too much extract can cause liver damage or other side effects. It is best to enjoy tea in moderation.
