Black tea is a strong and flavorful drink made from leaves.

These leaves come from a shrub or small tree called Camellia sinensis. There are two main types of this plant used for tea. One is a small-leaved variety from China. The other is a large-leaved Assamese plant. In many East Asian languages, people call this drink "red tea." This name comes from the color of the leaves after they are processed.

Black tea has a much stronger flavor than green or white tea. It also stays fresh for several years, while green tea fades quickly. Because it lasts so long, it was used as money in Mongolia, Tibet, and Siberia. Today, people enjoy it in many places like China, Indonesia, Japan, and Singapore.

Making black tea involves a special step called oxidation. This is when the leaves react with the air. First, the leaves are withered by blowing air on them. Then, they are processed in one of two ways. One way is called the orthodox method. This can be done by hand to make very high-quality tea. The leaves are rolled and then allowed to oxidize completely.

The other way is called the CTC method. This stands for "crush, tear, curl." A person named William McKercher developed this method in 1930. It uses machines to shred the leaves into tiny, even pieces. This is a very efficient way to make tea for bags.

After the leaves oxidize, they must be dried to stop the process. Then, the tea is sorted into different grades by size. The highest quality is called whole-leaf tea. Some of the best whole leaves are even called "orange pekoe." Below that are broken leaves, which are often sold as loose tea. There are also fannings and dusts. These are the smallest particles left over from making larger tea. Because these tiny bits have more surface area, they mix with water very fast. This makes them perfect for use in tea bags.

Many different regions grow tea with their own special tastes. In China, Lapsang Souchong tea is dried over burning pine. This gives the tea a very strong, smoky flavor. In Taiwan, Jinxuan tea smells like milk and nectar. India is also famous for many types of tea. Assam tea is very strong and tastes like malt. Darjeeling tea is thinner and has a fruity or floral taste. In Sri Lanka, tea grown in high places has a golden color. Low-grown teas are a dark burgundy brown and taste much stronger.

People often mix different teas together to create new flavors. This is called a blend. For example, Earl Grey tea is black tea mixed with bergelmot oil. English breakfast tea is a mix of Assam, Ceylon, and Kenyan teas. In India, people make a famous drink called Masala chai.

This is a blend of black tea, milk, and spices from the Indian sub-continent. It is often sweetened with sugar or honey. People all over the world have learned to enjoy these different ways of drinking tea. It is a drink that brings many cultures together.
