Shiitake

life science Maturity 7-9 Next article →

The shiitake is a dark mushroom.

It comes from East Asia. People now grow and eat them all over the world. These mushrooms grow in groups on dead wood. They like trees like oak, maple, and beech.

In Japan, people have ways to grow them. They used to cut logs from shii trees. They placed logs near trees that already had mushroom spores. Spores are tiny bits that help mushrooms grow. Today, people grow them on hardwood logs or special mixes.

Shiitake are used in many tasty meals. In China, they go in soups and stir-fry dishes. In Japan, they are used in miso soup. Some types are very special. One kind is called the flower mushroom. It has cracks on top that look like flowers.

These mushrooms are good for you. They are mostly made of water. They also have some protein and minerals. If you put them in the sun, they make vitamin D2. This is a type of vitamin.

Always cook them well. Cooking can help stop an itchy skin rash. This rash can happen if you eat them raw.
