The name means "how you like it." This is because you can pick your own toppings. You might add meat, cabbage, or seafood.

There are two main ways to make it. The Kansai style is found in many places. In this style, you mix the batter and ingredients together. You cook them on a teppan, which is a flat metal grill. Some people call this "Osaka soul food." You can top it with seaweed flakes or special sauce.

The Hiroshima style is different.

Instead of mixing, you make layers. You start with batter, then cabbage, then pork. You often add noodles like yakisoba to the stack. This style uses a lot of cabbage. It is piled very high and then pushed down as it cooks.
