It is a rice bowl called a donburi. It has a fried pork cutlet on top. This cutlet is called tonkatsu. To make it, cooks dip pork in flour. Then they use egg and panko breadcrumbs. They deep-fry the meat until it is crisp. Next, they cook the pork in a warm broth. This broth has dashi, soy sauce, and onions. They also add a beaten egg to the bowl.

There are many ways to make this dish. Some use a sauce called demi-glace with green peas. In Nagoya, people use a sauce made from miso. If you use beef, it is called gyū-katsu-don. If you use chicken, it is called oyako katsudon.

Katsudon is special for students in Japan. They eat it before a big test. This is because the word "katsu" sounds like a word for "to win." It helps them feel ready to win. You might even see it in Japanese films. In these movies, police tell a joke about it. They say eating katsudon makes people tell the truth!
