The name comes from two words. One part means "how you like it." The other part means "grilled." This name is perfect because you can choose your own favorite toppings. You might add meat, seafood, or many vegetables. Some people even call it "Japanese pizza." It is a fun dish that brings people together.

There are two main ways to cook this tasty food. In the Kansai style, you mix everything together. You use flour, eggs, dashi, and shredded cabbage in a bowl. Then, you fry the mix on a teppan, which is a flat metal griddle. You can add things like octopus, shrimp, or cheese. After it cooks, you top it with special sauce and seaweed flakes.

The Hiroshima style works in a very different way. Instead of mixing, you build the dish in layers. You start with batter, then add cabbage, pork, and noodles. This style uses much more cabbage than the Kansai style. The cabbage starts in a very high pile. The cook pushes it down as it cooks on the heat.

This dish has a long and interesting history. Long ago, people made sweet treats called funoyaki. In the Meiji era, children loved a snack made by drawing pictures in batter. The word "okonomiyaki" first appeared at a shop in Osaka in the 1930s. After World War II, rice was hard to find. Okonomiyaki became a popular, filling meal because it was inexpensive.
