He is often called the "father of food science." This is because he found a way to keep food fresh for a long time. In the early 1800s, he invented airtight food preservation. This helped people store many kinds of food without it spoiling. His work changed how we eat and how we travel. Before his invention, people had to rely on dried or salted food.

Appert's new method was much better for many people.

His way of saving food had a very specific set of steps. First, he put food like beef, eggs, or milk into thick glass bottles. He left a small space of air at the top of each bottle. Next, he used a cork to seal the jar. He used a tool called a vise to make the seal very tight. Then, he wrapped the bottles in canvas cloth for protection. Finally, he placed the bottles in boiling water for a long time. The heat cooked the food and helped it stay good in the sealed jar.

Appert began his experiments around the year 1795. He was born in Châlons-en-Champagne as the ninth of eleven children. He worked in his family's inn before becoming a chef in Paris. During the French Revolution, he faced some very hard times. He was even arrested in April 1794 during the Reign of Terror. Despite these troubles, he stayed focused on his work with food. In 1804, he opened the first food bottling factory in Massy, near Paris.

Appert faced many financial problems during his life. His equipment was very expensive to use. He declared bankruptcy in 1806, but he kept working. In 1810, the French government gave him 12,000 francs. They did this so he would share his secrets with everyone. That same year, he published a book about his method. It was called "The Art of Preserving Animal and Vegetable Substances." This was the very first book about modern food preservation.

It had 6,000 copies printed in 1810.

Even though he was a great inventor, he did not know why his method worked. He did not know about bacteria yet. Scientists had not yet discovered that tiny living things cause food to spoil. His method was so simple that it spread very quickly. In 1810, a man named Peter Durand used a different material. He used tin instead of glass to make cans. This led to the modern canning we see in stores today. Today, many places honor him with statues and even street names.
