People call him the "father of food science." In 1795, he began testing new ways to save food. He worked with things like soup, vegetables, and fruit.

Appert put food into thick glass bottles. He left a little air at the top. Then, he used a cork to seal the jar. He used a tool called a vise to make the seal tight. He wrapped the bottles in cloth. Finally, he put them in boiling water. This heat helped the food stay good.

Appert did not know why this worked. He did not know about bacteria yet. Bacteria are tiny living things that can spoil food. Even so, his way was very helpful. It was much better than the dried food sailors used on ships. In 1810, he wrote a book about his work. This was the first book on how to save food this way. His ideas helped start the way we make canned food today.
