In the late 1700s, families used selective breeding. They chose specific animals to make new types of cattle. They used other cattle, like Shorthorns, to help. At first, the colors were not all the same. Herds could be yellow, grey, or light brown. By the end of the 1700s, the white face was common. The red color became steady during the 1800s.

This breed started in Herefordshire, England.

A new American herd started in Albany, New York, in 1840. They were in Australia before 1850. They also reached Argentina in 1858.
