A yakhchāl is an ancient ice house. The name means "ice pit." These structures were built in Persia a long time ago. Some were built as far back as 400 BCE.

They were built in hot deserts. Engineers used a special mortar called sarooj. This was a mix of sand, clay, lime, and even egg whites. It was very thick and kept heat out. This helped keep the inside cold all year.

Many yakhchāls had a tall, cone shape. This shape helps heat rise and move out the top. This is called the solar chimney effect. It lets warm air escape through holes at the peak. At the same time, cool air flows into the bottom.

Some buildings had shade walls. These walls were very high. They blocked the hot sun from the ice pools. In the desert, nights can be very cold. The ice pools used this cold to freeze water.

People stored ice in these deep pits. They used the ice to keep food fresh. They also used it to make cold treats. They made desserts like sorbets and kulfi. Some of these old buildings still stand today.
